If you’ve ever been to a restaurant where they bring out warm bread with a dish of olive oil and seasonings, you know how irresistible a good bread dip can be. It’s one of those simple pleasures—just a few ingredients coming together to create something deeply flavorful and satisfying.
This olive oil bread dip is my take on one I used to love from a little Italian restaurant Erik and I used to visit. They served a dip with crispy, golden garlic that infused the oil with the most incredible aroma.
That restaurant has been gone for years now, but the memory of that dip stuck with me, and I had to recreate it at home.
The best part? It’s so easy to make. With just a handful of ingredients, you get a rich, garlicky dip perfect for sharing. Serve it as an appetizer at a dinner party, a cozy addition to date night, or part of a larger spread for an Italian-inspired meal.
However you enjoy it, this recipe will become a favorite.
Why This Recipe Works
Some of the best recipes are the simplest, and this olive oil bread dip is a perfect example. With just a handful of ingredients, it delivers bold, complex flavors that make every bite irresistible. Here’s what makes it so good:
- High-Quality Olive Oil = Maximum Flavor – A great olive oil is the foundation of this dip. Extra virgin olive oil brings richness, depth, and a smooth finish that pairs beautifully with bread.
- Toasted Garlic for a Bold, Savory Kick – Toasting garlic takes away its sharpness and brings out a deep, slightly nutty flavor that infuses the oil. It’s the secret to making this dip extra special.
- Balsamic Vinegar for a Sweet-Tangy Balance – A touch of balsamic vinegar adds just the right amount of acidity and sweetness to complement the richness of the oil.
- Quick and Easy to Make – No complicated steps here—just toast the garlic, mix everything together, and you’re ready to serve. It’s an effortless way to elevate a meal.
Whether you’re making this for a gathering or just treating yourself to a restaurant-style experience at home, this dip is as simple as it is delicious.
Ingredients and Substitutions
This olive oil bread dip comes together with just a few simple ingredients, but each one plays a key role in the flavor. Here’s what you’ll need, plus some easy ways to customize it.
Main Ingredients
- Olive Oil – The base of the dip, providing richness and depth of flavor.
- Garlic – Toasted to bring out its nutty, slightly sweet aroma.
- Balsamic Vinegar – Adds a touch of acidity and sweetness to balance the oil.
- Seasonings – A blend of salt, black pepper, and optional crushed red pepper flakes for heat.
Best Breads for Dipping
This dip works with a variety of breads, so feel free to choose your favorite. Some great options include:
- Crusty Baguette – Classic and perfect for soaking up the flavorful oil.
- Sourdough – Adds a slight tang that complements the balsamic.
- Focaccia – Light, fluffy, and full of olive oil flavor already.
- Whole-Grain Bread – A heartier option that still pairs well with the dip.
Choosing the Best Olive Oil & Vinegar
A high-quality extra virgin olive oil (EVOO) is key to making a truly flavorful bread dip. Since olive oil is the base of this recipe, choosing the right one makes a big difference in taste and aroma.
What to Look for in a Good Olive Oil
- Extra Virgin – Always go for extra virgin olive oil, which is the least processed and has the most robust flavor.
- Cold-Pressed – This method preserves more of the natural antioxidants and healthy fats.
- Origin Matters – Look for reputable sources, such as single-origin oils from Italy, Greece, or California. A harvest date on the bottle is also a good sign of freshness.
For an added twist, try infused olive oils, like garlic, chili, or rosemary, to enhance the dip with a built-in layer of flavor.
Choosing the Right Vinegar
While balsamic vinegar is a classic pairing, there are plenty of options depending on your taste preferences:
- Traditional Balsamic – Rich, slightly sweet, and deep in flavor.
- White Balsamic – Milder and less syrupy than traditional balsamic.
- Red Wine Vinegar – Tangy and bright, a great option for a sharper contrast.
- Lemon Juice – Not a vinegar, but it can provide a fresh, citrusy acidity.
You can find high-quality olive oils and vinegars at specialty food stores, farmers’ markets, or online retailers.
Why Toasted Garlic Makes a Difference
Garlic is a star ingredient in this dip, and toasting it takes the flavor to another level. Instead of the sharp bite of raw garlic, toasted garlic is mellow, slightly sweet, and deeply aromatic. It infuses the olive oil with a rich, nutty flavor that enhances every dip of bread.
While you can find pre-toasted garlic at some grocery stores or online, making it at home ensures the freshest flavor and infuses the oil with garlic as well. (Step-by-step instructions for toasting garlic will be included in the recipe method below.)
Also, while I usually use the minced garlic in the jar for ease, it won’t work for this recipe. The garlic just won’t crisp the way fresh does.
By using high-quality olive oil, the right vinegar, and perfectly toasted garlic, you’ll create a dip that’s simple but packed with incredible depth of flavor.
Customizing Your Olive Oil Bread Dip
One of the best things about this dip is how easily you can tweak it to match your taste preferences or what you have on hand. Whether you want to adjust the flavors and spice level or make it dairy-free, here are some simple ways to make it your own.
Flavor Variations
- Swap the Balsamic Vinegar – Use lemon juice for a brighter, fresher taste or red wine vinegar for a more subtle tang.
- Use Infused Olive Oils – Try garlic, basil, chili, or rosemary-infused olive oil for an extra layer of complexity.
- Mediterranean Twist – Stir in finely chopped sun-dried tomatoes or capers for a briny, savory boost.
Best Additions for Extra Flavor
- Fresh Herbs – Rosemary, thyme, or basil add a fragrant, aromatic touch.
- Red Pepper Flakes – A little heat goes a long way! Adjust to your spice preference.
- Grated Parmesan Cheese – A sprinkle of grated cheese brings a salty, umami depth. Pecorino or agiano cheese would work well, too.
- Smoked Paprika – Adds warmth and a slightly smoky flavor.
Dairy & Vegan Adjustments
- Cheesy Finish – If you love a more decadent dip, stir in parmesan or pecorino.
- Dairy-Free Alternative – Nutritional yeast is a great swap for a similar savory, cheesy note without any dairy.
With so many ways to customize this dip, you can make it a little different every time!
Health Benefits of Olive Oil
Remember that no one food is capable of significantly changing your health on its own. However, in conjunction with a well-balanced diet, olive oil appears to have many health benefits.
- It contains monounsaturated fats that are good for your heart, vitamins E and K, and other antioxidants that can reduce inflammation. This can reduce your risk of heart disease, diabetes, arthritis, cancer, and other chronic conditions.
- It may be protective against Alzheimer’s disease.
- Preliminary studies indicate that olive oil may improve symptoms of mental illness, including Major Depressive Disorder.
How to Make Olive Oil Bread Dip
This dip is all about simple ingredients coming together for maximum flavor. Taking a few extra minutes to toast the garlic makes a big difference, infusing the olive oil with a deep, rich taste. Follow these steps to create a restaurant-quality bread dip at home.
Step 1: Toast the Garlic
Toasting garlic mellows its sharpness, giving it a slightly sweet, nutty flavor that blends beautifully with olive oil. Here’s how to do it right:
- Warm the Olive Oil – Pour about ¼ cup of high-quality extra virgin olive oil into a small skillet. Set the heat to medium-low—you want it warm, but not too hot.
- Add the Garlic – Once the oil is warm, add 2-3 cloves of freshly minced garlic. The key is to cook it slowly so the flavor infuses into the oil without burning.
- Swirl Occasionally – Let the garlic cook for 7-8 minutes, stirring or gently swirling the pan every so often. As it cooks, it will darken to a golden-brown shade.
- Strain & Cool – Once the garlic reaches a deep golden color, carefully pour the oil through a fine mesh strainer into your serving bowl. This separates the garlic from the oil.
- Crisp Up the Garlic – Spread the strained garlic onto a paper towel. It will continue to crisp as it cools, adding a delicious crunch to the final dip.
🔹 Tip: If the garlic starts turning dark brown too quickly, reduce the heat. Burnt garlic tastes bitter and can overpower the dip.
Step 2: Mix the Bread Dip
Now that you have your garlic-infused oil, it’s time to bring everything together:
- Season the Oil – Stir in ½ teaspoon Italian seasoning (or other dried herbs), ¼ teaspoon red pepper flakes, and a pinch of salt. These seasonings enhance the dip with warmth and subtle spice.
- Drizzle in the Vinegar – Add 1 teaspoon of balsamic vinegar (or your chosen substitute). The acidity balances the richness of the oil.
- Add the Toasted Garlic – Sprinkle the crispy toasted garlic over the top. You can stir it in or leave it as a topping for added texture.
Step 3: Serve & Enjoy
This dip is best served fresh! Here’s how to make the most of it:
- Classic Bread Dip – Pour into a shallow dish and serve with crusty bread like baguette, sourdough, or focaccia.
- Drizzle Over Veggies – Use as a finishing touch on roasted or grilled vegetables for extra richness.
- Charcuterie Board Addition – Serve alongside cheese, olives, marinated artichokes, and fresh fruit for a Mediterranean-inspired spread.
- Salad Dressing or Marinade – Mix leftovers with a splash of extra vinegar or lemon juice for an easy vinaigrette. It also makes a fantastic marinade for tofu or vegetables.
Storing & Reusing Leftovers
If you have leftover dip, here’s how to store it properly:
- Refrigerate in an airtight container for up to 3 days. The garlic may continue to infuse the oil, deepening the flavor.
- Bring to room temperature before serving, as olive oil solidifies when chilled. A few minutes on the counter or a quick stir will help.
- Repurpose it – Leftovers don’t have to go to waste!
- Use it as a flavorful base for homemade dressings and marinades
- Toss with pasta for a quick side dish.
- Use it as a sandwich spread.
- Drizzle over roasted vegetables. This would go great with potatoes!
💡 Tip: If using fresh garlic in olive oil, avoid storing it for too long, as it can pose a food safety risk. If you plan to keep it longer, refrigerate immediately and discard it after a few days.
This dip is simple, versatile, and delicious—whether serving it with warm bread or finding creative ways to use up every last drop!

Not satisfied with this. Followed recipe exactly. Doesn’t taste balanced, and that particular olive oil is too strong for my taste. A good starting point to fiddle around with to get it to my liking.. really sorry this didn’t work out for me
I’m sorry that olive oil has a stronger flavor than you prefer. There’s definitely milder versions out there, or even different oils to try. I was going for a strong flavor, and that’s what this recipe delivers. Enjoy your experimenting!
much easier to make than I thought it would be!
